  1. Great summer supper ideas

    As summer is approaching many people are looking for easy meal ideas. There is nothing worse than standing over a hot stove in the summer heat so let’s review some quick vegetarian meal ideas sure to cool the palate.

    The first recipe is grilled ratatouille with goats cheese. For this recipe you will need two medium courgettes, a large red onion, large yellow pepper, large aubergine, 2 tablespoons of olive oil, a handful crumbled goat cheese, some basil leaves and salt and pepper for taste. Start by preheating your grill to medium heat and place all of the vegetables on a baking sheet and drizzle with half of the olive oil. Cook until they are just slightly burnt, about 4-5 minutes per side. Once cooked, drizzle the vegetables with remaining olive oil, add the goats cheese and basil.

    Next up is fried chickpeas. Sounds a bit suspect but it’s a lovely, simple meal and can be done in a flash. You will need one can of chickpeas, 3 tbp of olive oil and some salt to taste. Pour the olive oil into a skillet and heat. Drain the oil from the chickpeas and pour peas into the pan. Cook until golden brown (about 5-7 minutes). Drain any excess oil and enjoy with a large green salad and some crusty bread (and some white wine or a big glass of Pimms).

    Lastly, South West bean salad which can be thrown together in a matter of minutes. Buy a bag of frozen vegetable mix from your local grocery store, particularly the ones with a good mix of peppers, sweetcorn and courgette. Thaw the vegetables under cool water. Add any salsa you have along with cottage cheese and perhaps some kidney beans.

    No matter what meal you eat this summer, make it easy. Summer is about having fun in the sun and not slaving over a hot stove!!


  2. Yummy Summer Puddings

    On a warm sunny evening, nothing is better than a light summer pudding accompanied by a glass of your favourite poison! Sangria for us please!

    Here are a few of our favourite summer time treats;

    • Barbeque fruit – yep, you can barbeque fruit and it is delicious. For simplicities sake, slice some pineapple and just throw it on there, it will be delicious. Also easy are barbequed bananas, just put a slit in the banana skin, stick some pieces of your favourite chocolate into the slit, wrap in tin foil and put on the Barbie for 5/6 minutes….mmmmm

    • Simple fruit salad – use summer fruits for a simple fruit salad or even better a summer trifle with loads of rum! You can use all types of native and also exotic fruits and herbs like mint or even coriander to spice things up a lit bit. Serve in a beautiful glass dish with some fresh white linen for that extra special touch.

     

     

    • Cupcakes – cupcakes all year round for us! The beauty of cupcakes is that you can alter flavours to match the season. This summer we’re all about strawberries and cream vanilla cupcakes!

    • Strawberries and cream – a summer staple and easy to throw together when you’ve had one too many Pimms! Make it that little bit special by whipping up some double cream with a few drops of vanilla essence or orange water or even a few twists of black pepper! Or, add a tiny amount of balsamic vinegar to the strawberries before adding fresh cream.

     

     

    • Meringues with summer berries and berry sauce – delicious and super easy (if you buy your meringues!)

    • Rice Pudding – lace with a vanilla pod and some sugar – a family favourite.

    • Summer Pudding – a summer pudding is a traditional bread style pudding soaked with currants and caster sugar. It is really easy to make and though not as light as some summer dessert options, this is a delicious after dinner treat served with a dollop of cream!

    • Ice cream sandwiches – take two biscuits and a dollop of your favourite ice cream et voila! You can be really inventive with this dessert – use any flavour of ice cream with any biscuit combination. Roll the ice cream in chopped nuts or chocolate drops or add a drop of raspberry sauce or dulce de leche for extra flavour.

     

     

    So you see, it will be pretty easy to impress your guests with a delicious summer pudding this year, so easy in fact that you can get your hubby to do it and relax on that lawn chair a little longer!
